Super Brownies

I learned this recipe from a friend in college. They’re really good – I like to use either peanut butter or white chocolate chips instead of chocolate chips. These brownies freeze well wrapped in plastic wrap.

Ingredients

  • 1 cup unsalted butter

  • 1 cup unsweetened cocoa powder

  • 2 cups sugar

  • 4 eggs

  • ¾ cup all-purpose flour

  • ¼ cup cake flour (optional - if not available use a total of 1 cup all-purpose flour)

  • 1 Tbsp. vanilla

  • 1 tsp. kosher salt

  • 1 (12 oz.) pkg. good chocolate chips

  • 1 cup chopped nuts (optional - I hate nuts in brownies)

Directions

  • Preheat oven to 350.

  • Grease 13 x 9 x 2 pan.

  • Melt the butter over low heat (or microwave); pour into large mixing bowl.

  • Add the cocoa, and stir until well blended.

  • Add the sugar, and mix well. Add the eggs, one at a time, beating well after after each addition.

  • Add the flour, vanilla, and salt and stir until just mixed together. Do not overbeat.

  • Stir in the chocolate chips and (optional nuts.)

  • Spread in the pan and bake 30 to 35 minutes.

  • Let cool on a rack for 10 minutes. Cut into squares.
