Super Brownies
I learned this recipe from a friend in college. They’re really good – I like to use either peanut butter or white chocolate chips instead of chocolate chips. These brownies freeze well wrapped in plastic wrap.
Ingredients
1 cup unsalted butter
1 cup unsweetened cocoa powder
2 cups sugar
4 eggs
¾ cup all-purpose flour
¼ cup cake flour (optional - if not available use a total of 1 cup all-purpose flour)
1 Tbsp. vanilla
1 tsp. kosher salt
1 (12 oz.) pkg. good chocolate chips
1 cup chopped nuts (optional - I hate nuts in brownies)
Directions
Preheat oven to 350.
Grease 13 x 9 x 2 pan.
Melt the butter over low heat (or microwave); pour into large mixing bowl.
Add the cocoa, and stir until well blended.
Add the sugar, and mix well. Add the eggs, one at a time, beating well after after each addition.
Add the flour, vanilla, and salt and stir until just mixed together. Do not overbeat.
Stir in the chocolate chips and (optional nuts.)
Spread in the pan and bake 30 to 35 minutes.
Let cool on a rack for 10 minutes. Cut into squares.
